Biography
Dr. Elizabeth "Liz" Smith joined MTSU in the fall of 2017. She is currently an Assistant Professor in the Nutrition and Food Science Department. Dr. Smith teaches a variety of nutrition classes including Medical Nutrition Therapy 1 and 2, Nutrition Coaching and Counseling Skills, Community Nutrition, and Nutrition and Obesity. Dr. Smith provides leadership to the new Master of Professional Studies- Leadership in Nutrition program.

Read More »Dr. Elizabeth "Liz" Smith joined MTSU in the fall of 2017. She is currently an Assistant Professor in the Nutrition and Food Science Department. Dr. Smith teaches a variety of nutrition classes including Medical Nutrition Therapy 1 and 2, Nutrition Coaching and Counseling Skills, Community Nutrition, and Nutrition and Obesity. Dr. Smith received her PhD from The Ohio State University in 2017 and is a Registered Dietitian. Her master’s degree is from Central Michigan, and bachelor's degree from Purdue University.
Prior to joining MTSU, Dr. Smith was a Family and Consumer Sciences Educator and Supplemental Nutrition Assistance Program Regional Program Specialist at The Ohio State University. Dr. Smith worked in the clinical dietetics area in multiple capacities including pediatrics at Baptist Medical Center, Wolfson’s Children’s Clinic, Marion General Hospital, Wyandot Memorial Hospital, and Abilene Medical Center.
