Biography
Dr. Sheehan-Smith joined the faculty at MTSU in 1994 as an adjunct instructor; she is currently a Professor in Nutrition & Food Science and Director of the Didactic Program in Dietetics. She completed her B.S. in Dietetics and Institution Administration at Western Kentucky University, and a dietetic internship, her M.Ed. in Science Education and Ed.D. in Human Resource Development at Vanderbilt University. Dr. Sheehan-Smith teaches three Experiential Learning (EXL) courses including Senior Seminar in Dietetics, Food Systems Management and Dietetics Management. These courses are offered as part of MTSU’s EXL Scholars Program and focus on partnering with area community service, healthcare and media organizations to provide students with hands-on learning opportunities. Dr. Sheehan-Smith also teaches three courses in the MPS, Nutrition in Leadership online graduate program including Effective Program Management, Entrepreneurial Skills for Nutrition Professionals and Current Issues in Sustainable Food Systems. In recognition of her teaching and student mentoring skills, she received the 2021 Outstanding Dietetics Educator by the North Central Region Nutrition and Dietetic Educators and Preceptors. She is also a past recipient of the MTSU Outstanding Teacher and Outstanding Experiential Learning Faculty Awards, and Outstanding Dietetics Educator Award for the Nashville and Tennessee Academies of Nutrition and Dietetics.
